Preparation Instructions
1. Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook rice according to package instructions. Once cooked, transfer to a bowl and mix with rice vinegar, sugar, and salt. Allow to cool.
2. Prepare Salmon
Cut the salmon fillet into rectangular pieces that fit your sushi mold. Season with salt and let it sit for about 10 minutes.
3. Assemble the Sushi
In a sushi mold, layer the cooled sushi rice at the bottom, then place the salmon on top. Press down firmly to compact.
4. Torch the Salmon
Carefully remove the sushi from the mold. Use a kitchen torch to lightly sear the top of the salmon until it is golden brown.
5. Prepare Umami Sauce
In a small bowl, mix together soy sauce, mirin, and sesame oil. Adjust seasoning as desired.
6. Serve
Slice the pressed sushi into bite-sized pieces. Drizzle the umami sauce over the top and garnish with shaved serrano peppers and a dab of wasabi.
