Prepare the Broccoli
Preheat the oven to 200°C (400°F). Toss the broccoli florets in 1 tablespoon of vegetable oil and season with salt. Spread them on a baking sheet and roast in the oven for about 15-20 minutes until tender and slightly charred.

Cook the Rice Noodles
While the broccoli is roasting, cook the rice noodles according to the package instructions. Drain and set aside.

Make the Curry Sauce
In a large skillet or wok, heat the remaining tablespoon of vegetable oil over medium heat. Add the red curry paste and sauté for 1-2 minutes until fragrant. Stir in the peanut butter and coconut milk, mixing until smooth.

Add Prawns
Add the prawns to the skillet and cook for about 5-7 minutes, or until they turn pink and opaque. Stir in the soy sauce and juice from the lime.

Combine and Serve
Add the cooked rice noodles to the skillet with the curry sauce and gently toss to combine. Adjust seasoning with salt if necessary. Serve hot, topped with roasted broccoli and garnished with fresh cilantro.
