Make the Filling
In a bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Fill the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Dampen the edges with water. Fold the wrapper in half and pinch the edges to seal. You can create pleats for a traditional look.

Cook the Gyoza
In a large skillet, heat a tablespoon of oil over medium-high heat. Place the gyoza in the skillet, making sure they are not touching. Fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Carefully add about 1/4 cup of water to the skillet and immediately cover it with a lid. Let the gyoza steam for about 5-7 minutes, or until the water has evaporated.

Serve
Remove the lid and let them cook for an additional minute to crisp up the bottoms. Serve hot with hot mustard on the side.
