Prepare the Pastry

    Make the Dough

    In a large bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Divide into 4 equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling

    Mix the Apples

    In a large bowl, combine sliced apples, granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until apples are well coated. Set aside.

Assemble the Pie

    Fill the Pastry

    Preheat the oven to 375°F (190°C). On a floured surface, roll out each disk of dough into a circle. Place one circle into a small pie dish or ramekin. Fill with the apple mixture, then cover with another rolled-out circle of dough. Seal the edges and cut small slits in the top for steam to escape.

Bake the Pie

    Place the assembled pies on a baking sheet and bake in the preheated oven for 25-30 minutes or until the crust is golden brown. Remove from the oven and let cool slightly.

Serve the Pie

    Add Toppings

    Drizzle the tops of the baked pies with Canadian maple syrup and sprinkle with toasted almonds. Serve warm with a scoop of Canadian maple ice cream on the side.
