Preparing the Rice

Rinse the Rice

In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps to keep the rice fluffy.

Cook the Rice

In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Grilling the Shrimp

Prepare the Marinade

In a bowl, mix together the olive oil, minced garlic, paprika, salt, black pepper, and lemon juice. This will be the marinade for the shrimp.

Marinate the Shrimp

Add the shrimp to the marinade, ensuring they are coated evenly. Allow the shrimp to marinate for at least 15 minutes at room temperature.

Preheat the Grill

Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

Grill the Shrimp

Once the grill is hot, place the marinated shrimp on the grill. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from the grill and set aside.

Plating

Serve the Dish

On a plate, place a generous scoop of the cooked rice. Top with the grilled shrimp. If desired, garnish with chopped fresh parsley and serve with lemon wedges on the side.
