Chicken Preparation

Marinate the Chicken
In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them evenly. Let them marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat and let rest.
Spinach Cream Sauce

Cook the Spinach
In a large skillet over medium heat, add the fresh spinach and cook until wilted, about 3 minutes. Remove from skillet and set aside.

Make the Cream Sauce
In the same skillet, add the minced garlic and sauté for 1 minute. Add the heavy cream and cream cheese, stirring until smooth. Add the cooked spinach, Parmesan cheese, and season with salt and black pepper. Let simmer for 5 minutes.

Mash the Potatoes
Return the drained potatoes to the pot. Add butter, heavy cream, and season with salt and black pepper. Mash until smooth and creamy.
Seasonal Vegetables

Prepare the Vegetables
In a bowl, toss the seasonal vegetables with olive oil, salt, and black pepper. Spread them evenly on a baking sheet.

Roast the Vegetables
Roast the vegetables in a preheated oven at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized.
