Preparing the Shrimp

Prepare the Shrimp Coating
In a bowl, mix the flour, cornstarch, Cajun seasoning, salt, and black pepper. In another bowl, whisk the egg and milk together.

Coat the Shrimp
Dip the popcorn shrimp into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until well coated.

Fry the Shrimp
Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, fry the coated shrimp in batches for 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
Making the Remoulade Sauce

Mix the Remoulade Ingredients
In a bowl, combine mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, garlic powder, paprika, and lemon juice. Mix well until smooth. Season with salt and pepper to taste.
Assembling the Po'Boy

Prepare the Bread
Slice the French bread or hoagie rolls lengthwise without cutting all the way through. Lightly toast them if desired.

Layer the Ingredients
Spread a generous amount of remoulade sauce on the inside of each roll. Add a layer of shredded lettuce, followed by the fried shrimp. Top with sliced tomatoes, red onions, and pickles.

Serve
Close the sandwich and serve immediately with extra remoulade sauce on the side.
