Shred Cabbage
Remove the outer leaves of the green cabbage and cut it into quarters. Using a sharp knife or a mandoline slicer, shred the cabbage into thin strips. Place shredded cabbage into a large mixing bowl.

Shred Red Cabbage
Repeat the same process with the red cabbage, shredding it into thin strips and adding it to the mixing bowl with the green cabbage.

Grate Carrots
Peel the carrots and use a box grater or food processor to grate them. Add the grated carrots to the mixing bowl.

Trim the ends of the green onions and finely chop them. Add the chopped green onions to the mixing bowl with the other vegetables.
