Method

Cake Layers

    Preheat the oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix dry ingredients

    In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine wet ingredients

    In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.

    Combine wet and dry

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Add boiling water

    Stir in the boiling water until the batter is smooth. Note that the batter will be thin.

    Bake the cakes

    Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    Cool the cakes

    Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Chocolate Ganache

    Heat heavy cream

    In a small saucepan, heat the heavy cream over medium heat until it just begins to boil.

    Combine with chocolate

    Remove from heat and pour the hot cream over the chocolate chips in a bowl. Let it sit for 5 minutes.

    Stir until smooth

    Stir the mixture until the chocolate is completely melted and the ganache is smooth. Allow to cool slightly.

Whipped Cream Topping

    Whip the cream

    In a mixing bowl, beat the heavy cream with an electric mixer until it begins to thicken.

    Add sugar and vanilla

    Add the powdered sugar and vanilla extract, then continue beating until stiff peaks form.

Assembly

    Layer cakes

    Place one cake layer on a serving plate. Spread a layer of chocolate ganache over the top.

    Add second layer

    Place the second cake layer on top and pour the remaining ganache over the top of the cake, letting it drip down the sides.

    Top with whipped cream

    Spread the whipped cream topping over the ganache, smoothing it out as desired.

    Garnish

    Sprinkle chocolate shavings over the top and add fresh mint leaves for garnish.
