Preparation of Vegetables

Prep the Veggies
Wash and slice the carrots, red bell pepper, and jalapeños into thin strips. Set aside.
Calamari Coating

Mix Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the Calamari
Dip the calamari rings into the flour mixture, ensuring they are fully coated. Shake off the excess flour.
Frying

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure the oil is hot enough for frying.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Plate the Dish
On a serving platter, arrange the fried calamari, carrots, red bell peppers, and jalapeños. Serve with marinara sauce on the side for dipping.
