For the Blackened Shrimp or Fish

    Prepare the Spice Mix

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

    Coat the Shrimp or Fish

    Pat the shrimp or fish dry with paper towels. Rub the spice mix evenly over the surface of the shrimp or fish.

    Cook the Shrimp or Fish

    Heat olive oil in a skillet over medium-high heat. Add the shrimp or fish and cook for about 2-3 minutes per side, or until cooked through and blackened. Remove from heat and set aside.

For the Street Corn Slaw

    Prepare the Corn

    If using fresh corn, grill or roast the corn until slightly charred. If using frozen corn, thaw and drain.

    Mix the Slaw

    In a large bowl, combine corn, shredded red cabbage, mayonnaise, lime juice, cotija cheese, salt, and black pepper. Toss until well combined.

For the Pickled Red Onions

    In a small saucepan, combine white vinegar, sugar, and salt. Bring to a simmer over medium heat, stirring until sugar dissolves.

    Pickle the Onions

    Place the thinly sliced red onions in a glass jar. Pour the pickling liquid over the onions, ensuring they are fully submerged. Let sit for at least 30 minutes.

For the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 15-20 seconds on each side, until pliable.

    Assemble the Tacos

    On each tortilla, place a portion of blackened shrimp or fish, a generous scoop of street corn slaw, a few pickled red onions, and a sprinkle of chopped cilantro.
