Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed sushi rice and water in a rice cooker or pot. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the water is absorbed. Remove from heat and let sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice with a fork and gently fold in the vinegar mixture. Let the rice cool to room temperature.

Prepare Fillings

    California Roll Preparation

    For the California roll filling, mix crab meat with sliced avocado and cucumber. Set aside.

    Spicy Tuna Preparation

    In a bowl, combine diced tuna with mayonnaise and sriracha to taste. Mix well and set aside.

    Salmon Preparation

    Slice fresh salmon into thin pieces and set aside.

    Shrimp Tempura Preparation

    If using frozen shrimp tempura, cook according to package instructions and set aside.

Assemble Hand Rolls

    Cut Nori Sheets

    Cut nori sheets in half to create rectangles. Place a sheet on a clean, dry surface with the shiny side facing down.

    Add Sushi Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread the rice onto the bottom left corner of the nori sheet, leaving about 1 inch from the edge.

    Add Fillings

    Add your choice of filling (California, spicy tuna, salmon, or shrimp tempura) on top of the rice.

    Roll the Nori

    Starting from the bottom, roll the nori over the fillings tightly, forming a cone shape. Seal the edge with a little water.

Serve

    Prepare Serving Plate

    Arrange the hand rolls on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
