    Prepare Ingredients

    Gather all the ingredients and prepare them by dicing the vegetables and cubing the tofu.

    Cook Tofu

    In a large pan or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.

    Cook Shrimp

    In the same pan, add the peeled and deveined shrimp. Cook until they turn pink and opaque, about 3-4 minutes. Remove from the pan and set aside with the tofu.

    Sauté Vegetables

    Add a bit more oil if necessary, then add minced garlic and ginger to the pan. Sauté for about 30 seconds until fragrant. Add diced carrots, bell peppers, and frozen peas. Stir-fry for about 5 minutes until the vegetables are tender.

    Add Rice and Eggs

    Add the cooked rice to the pan, stirring well to combine with the vegetables. Push the rice to one side of the pan and crack the two eggs into the empty side. Scramble the eggs until fully cooked, then mix them into the rice.

    Combine Everything

    Add the cooked shrimp and tofu back into the pan. Pour the shoyu sauce over the rice mixture. Stir everything together until well combined. Season with salt and pepper to taste.

    Garnish and Serve

    Remove from heat and sprinkle chopped green onions on top. Serve hot.
