    Peel and Cut Potatoes

    Peel the Russet potatoes and cut them into thin strips, approximately 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch.

    Soak Potatoes

    Place the cut potatoes in a large bowl and cover them with cold water. Add salt and let them soak for at least 30 minutes. This step helps to achieve a crispy texture.

Frying

    Prepare the Oil

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 325°F (160°C). Use a thermometer for accuracy.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    In small batches, carefully add the dried potatoes to the hot oil. Fry for about 4-5 minutes or until they are pale and soft, but not browned. Remove using a slotted spoon and drain on paper towels.

    Increase Oil Temperature

    Increase the oil temperature to 375°F (190°C).

    Final Fry

    Fry the pre-cooked potatoes again in batches for 2-3 minutes until they are golden brown and crispy. Drain on paper towels.

Topping

    Season the Fries

    While the fries are still hot, drizzle with white truffle oil, then sprinkle with grated Parmesan cheese, chopped parsley, and cracked black pepper to taste. Toss gently to combine.

    Serve the Pommes Frites immediately while they are hot, with your favorite dipping sauce if desired.
