Fish Tacos

Method

Preparation

  1. 1

    Marinate the Mahi-Mahi

In a bowl, combine lime juice, chopped cilantro, minced garlic, cumin, salt, and black pepper. Add the mahi-mahi fillets, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

  2. 2

    Cook the Mahi-Mahi

In a skillet, heat olive oil over medium-high heat. Remove the mahi-mahi from the marinade and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and let it rest.

  3. 3

    Prepare the Tortillas

While the fish is resting, warm the corn tortillas in a dry skillet over medium heat for about 1 minute on each side until they are pliable.

  4. 4

    Assemble the Tacos

Flake the cooked mahi-mahi into bite-sized pieces. Place a generous amount of the fish onto each tortilla. Top with cucumber-yucca root slaw and drizzle with chipotle aioli before serving.
