Grilled Seasonal Vegetables

Preparation and Grilling

    Prepare the Vegetables

    Wash and slice the zucchini and yellow squash into rounds. Cut the bell peppers into strips, the fennel bulb into wedges, and the onion into thick slices. Trim the asparagus to remove the woody ends, and peel the carrots before cutting them into sticks.

    Season the Vegetables

    In a large bowl, combine all the prepared vegetables. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to ensure all the vegetables are evenly coated.

    Preheat the Grill

    Preheat your grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.

    Grill the Vegetables

    Place the seasoned vegetables directly on the grill or in a grill basket. Grill for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.

    Glaze with Pesto

    Once the vegetables are grilled to your liking, remove them from the grill and place them in a serving dish. Drizzle the fresh basil pesto over the top while the vegetables are still warm, and toss gently to combine.
