    Prepare the Mahi-Mahi

    In a bowl, mix the olive oil, Cajun seasoning, salt, and pepper. Coat the mahi-mahi fillets evenly with this mixture.

    Cook the Mahi-Mahi

    Preheat a skillet over medium-high heat. Add the seasoned mahi-mahi fillets to the skillet and cook for about 4-5 minutes on each side or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest.

    Make the Pico Cabbage Slaw

    In a separate bowl, combine the chopped cabbage, grated carrots, lime juice, and cilantro. Mix well and season with additional salt and pepper to taste.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    Flake the cooked mahi-mahi with a fork and place a portion on each warmed tortilla. Top with the pico cabbage slaw.

    Serve

    Serve immediately with lime wedges on the side for squeezing over the tacos.
