Prepare the Dumpling Filling

Mix the Filling
In a large mixing bowl, combine ground chicken, finely chopped lemongrass, minced garlic, grated ginger, soy sauce, sesame oil, chopped green onions, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Make the Dough
In another bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Assemble the Dumplings

Shape the Dumplings
After the dough has rested, divide it into small pieces. Roll each piece into a thin circle (about 3 inches in diameter). Place a small spoonful of the filling in the center of each wrapper. Moisten the edges of the wrapper with water, fold it over, and pinch to seal tightly.

Steam the Dumplings
In a steamer, arrange the dumplings in a single layer and steam for about 10-12 minutes until fully cooked.
Make the Miso Brodo

Prepare the Broth
In a pot, bring the vegetable broth to a simmer. Whisk in the miso paste until dissolved. Add soy sauce, cubed tofu, and sliced scallions. Let it simmer for another 5-10 minutes.
Serve
