Preparation

    Prepare the pickled red onions by soaking thinly sliced onions in vinegar for at least 30 minutes. Drain before using.

    In a large bowl, mix shredded cabbage, chopped cilantro, pickled onions, lime juice, and salt to create the slaw. Set aside.

    In another bowl, combine sour cream, chipotle in adobo sauce, lime juice, and salt. Mix until smooth to prepare the chipotle crema.

Cooking Fish

    Prepare the Breading

    In a shallow dish, whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika, and cayenne pepper.

    Coat the Fish

    Dredge the cod fillets in the flour mixture, ensuring they are evenly coated.

    Fry the Fish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated cod fillets and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Assembling Tacos

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Place a fried cod fillet on each tortilla, followed by a generous scoop of slaw and a few slices of avocado.

    Drizzle with chipotle crema before folding the tortillas over.
