Making the Dough

    Prepare the Yeast

    In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine flour and salt. Create a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Preparing the Sauce and Toppings

    Make the Sauce

    In a bowl, crush the canned San Marzano tomatoes with your hands or a fork. Season with salt to taste.

    Prepare the Cheese

    Slice the fresh mozzarella cheese into 1/4 inch thick slices and set aside.

    Preheat Oven

    Preheat your oven to the highest setting (usually around 475°F - 500°F / 245°C - 260°C) and place a pizza stone or baking sheet inside to heat up.

Assembling and Baking the Pizza

    Shape the Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide the dough into two equal portions and stretch each portion into a round pizza shape.

    Add Sauce and Toppings

    Place the shaped dough onto a piece of parchment paper. Spread a thin layer of the tomato sauce over the dough, leaving a small border. Distribute the mozzarella slices evenly on top and sprinkle with fresh basil leaves.

    Drizzle with Olive Oil

    Drizzle the top of the pizza with a tablespoon of olive oil.

    Bake the Pizza

    Carefully transfer the pizza (with the parchment paper) onto the hot pizza stone or baking sheet. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbling.

    Serve

    Remove the pizza from the oven, let it cool for a minute, slice, and serve hot, garnished with extra fresh basil if desired.
