    Infuse the Demerara Syrup

    To make vanilla-infused demerara syrup, combine equal parts demerara sugar and water in a saucepan. Add a split vanilla bean to the mixture, bring it to a simmer, and stir until the sugar dissolves. Let it cool and remove the vanilla bean. Store in a sealed container in the refrigerator.

    Prepare the Glass

    Chill an Old Fashioned glass by filling it with ice water while you prepare the drink.

Mixing the Drink

    Combine Ingredients

    In a mixing glass, combine 2 oz of Weller 12 Year Bourbon, 0.5 oz of vanilla-infused demerara syrup, and 2 dashes of Xocolatl Mole Bitters.

    Stir the Mixture

    Fill the mixing glass with ice and stir gently for about 30 seconds until well chilled and diluted.

    Strain into Glass

    Discard the ice water from the Old Fashioned glass and strain the mixture into the glass over a large ice cube.

Garnishing

    Add Garnish

    Express the oils from a piece of orange peel over the drink by holding it over the glass and giving it a twist. Drop the peel into the glass and add a maraschino cherry for garnish.
