Preparation of Octopus

Clean the Octopus
Rinse the octopus under cold water. Remove the beak and ink sac if not already done.

Marinate the Octopus
In a large bowl, combine olive oil, lemon juice, minced garlic cloves, chopped parsley, oregano, salt, and black pepper. Add the cleaned octopus, ensuring it's well coated in the marinade. Cover and refrigerate for at least 1 hour (or overnight for better flavor).

Preheat your grill to a medium-high temperature (about 400°F or 200°C).

Make the Aioli
In a mixing bowl, combine the mayonnaise, minced garlic clove, lemon juice, salt, and black pepper. Whisk until smooth and well combined. Adjust seasoning to taste.
