Calamari

Method

Preparing the Calamari

  1. 1

    Clean and Cut the Calamari

Ensure the calamari is cleaned and cut into rings. Rinse under cold water and pat dry with paper towels.

  2. 2

    Prepare the Coating

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

  3. 3

    Dredge the Calamari

Toss the calamari rings in the flour mixture until well coated. Shake off any excess flour.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Marinara Sauce

  1. 6

    Sauté the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 7

    Add the Tomatoes

Pour in the canned crushed tomatoes and stir to combine.

  3. 8

    Season the Sauce

Add dried oregano, salt, and black pepper to the sauce. Stir well and let simmer for about 15-20 minutes, stirring occasionally.

  4. 9

    Garnish and Serve

Once the sauce has thickened slightly, remove from heat. Garnish with fresh chopped basil before serving.
