Prepare the Brussels Sprouts
Preheat your oven to 425°F (220°C). Rinse the Brussels sprouts under cold water, then trim the ends and remove any yellow or damaged leaves. Cut them in half lengthwise.

Make the Spicy Sesame Sauce
In a medium bowl, whisk together the sesame oil, soy sauce, sriracha sauce, honey, rice vinegar, and minced garlic until well combined.

Toss and Roast
In a large mixing bowl, add the halved Brussels sprouts and pour the spicy sesame sauce over them. Toss well to ensure all the Brussels sprouts are coated. Spread them in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, turning halfway through, until they are crispy and golden brown.

Once roasted, remove the Brussels sprouts from the oven and sprinkle with sesame seeds and chopped green onions. Serve hot as a delicious side dish.
