Method
Preparation
- 1
Preheat Oven and Prepare Ramekins
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking. Place the ramekins on a baking tray for easy handling.
- 2
Melt Butter and Chocolate
In a medium saucepan, melt the unsalted butter and semi-sweet chocolate over low heat, stirring constantly until smooth. Remove from heat and let it cool slightly.
- 3
Combine Sugar and Eggs
In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy. This should take about 2 minutes.
- 4
Combine Mixtures
Add the melted chocolate mixture to the egg mixture, followed by the vanilla extract and a pinch of salt. Stir until fully incorporated.
- 5
Add Flour
Gently fold in the all-purpose flour until just combined. Do not overmix; it's okay if there are a few lumps.
- 6
Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.
- 7
Bake the Cakes
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look slightly puffed.
- 8
Serve
Remove from the oven and let the cakes sit for 1 minute. Carefully run a knife around the edges, then invert onto individual plates.
