Calamari Preparation

Prepare the Squid
Start by rinsing the squid under cold water. Pat them dry with paper towels and cut them into rings.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Bread the Squid
Dip each ring of squid into the beaten eggs, allowing excess to drip off, then coat them in the flour mixture. Ensure they are evenly coated.

Fry the Calamari
Fry the squid rings in batches for about 2-3 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.

Garnish and Serve
Remove from heat and stir in the fresh basil. Serve the marinara sauce warm alongside the fried calamari.
