Takoyaki Batter

Method

Preparing Takoyaki Batter

  1. 1

    Mix the Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and soy sauce. Whisk together until well combined.

  2. 2

    Add Wet Ingredients

In a separate bowl, beat the eggs and then add the dashi stock. Mix well and gradually pour into the dry ingredients, stirring until a smooth batter forms. Let it rest for about 10 minutes.

Making Takoyaki

  1. 3

    Preheat Takoyaki Pan

Preheat a takoyaki pan over medium heat and brush each mold with a little oil to prevent sticking.

  2. 4

    Fill the Molds

Pour the batter into each mold, filling them about 1/2 full. Add a piece of diced octopus, some tempura scraps, and a sprinkle of green onions to each mold.

  3. 5

    Cook the Takoyaki

Allow the takoyaki to cook for about 3-4 minutes until the edges begin to brown. Use a skewer or chopstick to gently turn each ball 90 degrees to create a round shape.

  4. 6

    Finish Cooking

Continue cooking for another 3-4 minutes, turning frequently until the takoyaki is golden brown and crispy on the outside. Remove from the pan and set aside.

Serving Takoyaki

  1. 7

    Add Toppings

Drizzle the cooked takoyaki with kewpie mayonnaise and okonomiyaki sauce. Sprinkle with chopped green onions and top with smoked bonito flakes.

  2. 8

    Serve Hot

Serve the takoyaki hot with toothpicks for easy eating.
