Method
Prepare Sushi Rice
Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
Cook the Rice
In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and the rice is tender.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
Form the Rice
Once cooled, press the rice into a square or rectangular mold to form a compact layer. Refrigerate for at least 30 minutes to firm up.
Prepare Spicy Tuna Mixture
Chop the Tuna
Dice the sushi-grade tuna into small cubes and place in a bowl.
Mix the Ingredients
Add mayonnaise, sriracha, soy sauce, sesame oil, and chopped green onions to the diced tuna. Mix thoroughly until well combined.
Grill the Rice
Assemble and Serve
Top with Tuna
Remove the crispy rice from the grill and place on a serving platter. Generously top each piece with the spicy tuna mixture.
Garnish
Slice the Serrano pepper into thin rings and sprinkle over the spicy tuna. Optionally, sprinkle sesame seeds on top for added crunch.
Enjoy
Serve immediately while the rice is still warm and crispy.
