Begin by slicing the smoked tofu into bite-sized cubes. Julienne the bell pepper and carrot into thin strips. Chop the green onions, separating the white parts from the green tops.

Cook the Noodles
In a large pot of boiling water, cook the Wokashi noodles according to the package instructions until al dente, usually about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

In a small bowl, whisk together the soy sauce, sesame oil, smoked paprika, minced garlic, grated ginger, chili flakes, and brown sugar until well combined. Set aside.

In a large wok or skillet, heat a tablespoon of oil over medium-high heat. Add the white parts of the green onions, bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
