Rehydrate the Seaweed
Place the dried seaweed mix in a bowl and cover it with warm water. Allow it to soak for about 10-15 minutes until it becomes soft. Drain and gently squeeze out excess water.

Prepare the Vegetables
Julienne the carrot and cucumber into thin strips. Chop the green onions finely.

Mix the Salad
In a large mixing bowl, combine the rehydrated seaweed, baby mixed greens, julienned carrot, cucumber, and chopped green onions.

Dress the Salad
In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and salt. Pour the dressing over the salad and toss gently to combine.

Garnish and Serve
Sprinkle sesame seeds on top of the salad before serving. Serve immediately or chill for 15 minutes to let the flavors meld.
