Preparation

  1. 1

    Prepare the Quinoa

Rinse 1 cup of quinoa under cold water in a fine-mesh strainer. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat.

  2. 2

    Cook the Quinoa

Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and all the water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

  3. 3

    Prepare the Broccolini

While the quinoa is cooking, rinse the broccolini under cold water and trim the ends if necessary. Mince the garlic cloves.

Sautéing

  1. 4

    Sauté Broccolini

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

  2. 5

    Add Broccolini

Add the broccolini to the skillet and season with 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, and 0.5 teaspoon of red pepper flakes. Sauté for about 5-7 minutes, stirring occasionally, until the broccolini is tender but still crisp.

Serving

  1. 6

    Plate and Serve

To serve, place a generous scoop of the fluffy quinoa on a plate and top with the sautéed broccolini. Enjoy your dish warm!
