Mochi Dough
Ice Cream Filling
Method
Prepare Mochi Dough
- 1
- 2
Cook the Dough
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another minute. Repeat this process for a total of 3 minutes until the dough is slightly translucent.
- 3
Cool the Dough
Allow the mochi dough to cool for about 5-10 minutes, until it's safe to handle.
- 4
Dust and Roll
Lightly dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and dust the top with more cornstarch. Using a rolling pin, roll out the dough to about 0.5 cm thickness.
- 5
Cut into Wrappers
Cut the rolled dough into squares (about 3x3 inches) using a sharp knife or pizza cutter. Make sure to dust with more cornstarch to prevent sticking.
Assemble Mochi Ice Cream
- 6
Scoop Ice Cream
Scoop the green tea and chocolate ice cream into balls, about 1-2 inches in diameter. Place them on a parchment-lined baking tray.
- 7
Wrap Ice Cream
Take one mochi square, and place a ball of ice cream in the center. Fold the edges of the mochi over the ice cream and pinch to seal. Dust with cornstarch if needed.
- 8
Repeat
Continue wrapping the remaining ice cream balls with the mochi squares until all are wrapped.
- 9
Freeze
Place the wrapped mochi ice cream back on the baking tray and freeze for at least 2 hours, or until firm.
