Wash the kale leaves thoroughly under cold water. Remove the tough stems and tear the leaves into bite-sized pieces.

In a large salad bowl, add the baby mixed greens. Ensure they are clean and any larger leaves are torn into smaller pieces.

Add the prepared kale to the bowl with the baby mixed greens. Toss gently to combine.
Dressing Preparation

Mix the Dressing Ingredients
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and grated ginger until well combined.

Add sesame seeds, salt, and black pepper to the dressing mixture. Adjust seasoning to taste.
