Method

For the Shoestring Fries

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin, shoestring-sized strips, about 1/8 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry thoroughly with a clean kitchen towel to ensure they fry properly.

    Heat the Oil

    In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and place them on paper towels to drain. While still hot, sprinkle with salt to taste.

For the Truffle Ranch

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, sour cream, dried dill, garlic powder, onion powder, and truffle oil.

    Season

    Add salt to taste and mix until all ingredients are well incorporated. Adjust truffle oil if a stronger flavor is desired.

    Chill

    Refrigerate the truffle ranch for at least 30 minutes to allow the flavors to meld.

For the Spicy Mayonnaise

    Combine the Ingredients

    In a small bowl, mix together the mayonnaise, Sriracha sauce, lemon juice, garlic powder, and salt.

    Adjust Flavor

    Taste and adjust seasoning as needed, adding more Sriracha for extra heat or more mayonnaise for a milder flavor.
