Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and chop the fresh tomatoes into small pieces. Dice the onion and mince the garlic cloves.

  2. 2

    Heat Olive Oil

In a large pot, heat the olive oil over medium heat.

Cooking

  1. 3

    Sauté Onions and Garlic

Add the diced onion and minced garlic to the pot. Sauté for about 5 minutes or until the onions are translucent.

  2. 4

    Add Tomatoes and Broth

Stir in the chopped tomatoes, vegetable broth, salt, black pepper, and red pepper flakes. Bring the mixture to a boil.

  3. 5

    Simmer the Mixture

Reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.

  4. 6

    Blend the Soup

Using an immersion blender, blend the soup mixture until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.

  5. 7

    Add Fresh Basil

Stir in the fresh basil and let the soup cook for an additional 5 minutes.

Serving

  1. 8

    Serve Hot

Ladle the soup into bowls. Top with optional Parmesan cheese and croutons if desired.
