Method
Prepare components
- 1
Soften ice cream
Remove vanilla ice cream from freezer and let sit at room temperature for 5–10 minutes until scoopable but still cold. Stir gently to loosen into a creamy texture if the container is slightly firm.
- 2
Prep graham crackers
Preheat oven broiler (or a kitchen torch if using). Lightly brush one side of each graham cracker with melted butter. Arrange crackers, buttered side up, on a baking sheet lined with parchment.
Toast marshmallows & crisp crackers
- 3
Broil method for toasting
Place the baking sheet with marshmallows (set on a separate sheet or on the same sheet if space allows) under the broiler about 4–6 inches from heat. Toast marshmallows for 30–90 seconds, watching closely, until they are golden brown and puffed. Rotate sheet as needed for even color. Remove when toasted to your liking.
- 4
Alternative torch method
If using a kitchen torch, place marshmallows on a heatproof surface and gently rotate while applying flame until evenly browned and gooey, about 20–40 seconds per marshmallow depending on torch strength.
- 5
Crisp crackers
While toasting marshmallows, place the buttered graham crackers under the broiler for 30–60 seconds until edges are slightly golden and crisp. Watch carefully to avoid burning. Remove and let cool slightly.
Assemble Sea’more Please
- 6
Spoon about 2 tablespoons of chocolate sauce onto four of the graham cracker pieces, spreading slightly but leaving a small border. If you prefer a thinner layer, warm the chocolate sauce briefly (10–15 seconds) to make it pourable.
- 7
Place a scoop (about 1/2 cup) of softened vanilla ice cream on top of the chocolate-coated crackers (one scoop per cracker). Smooth the top slightly to create a stable surface for the marshmallow.
- 8
Immediately top each ice cream-topped cracker with a toasted marshmallow, pressing gently so the marshmallow adheres and the ice cream spreads slightly, creating the classic s'more sandwich.
- 9
Top each sandwich with the remaining graham cracker pieces to create a lid, if you prefer a closed s'more. For an open-faced presentation, omit the top cracker and drizzle extra chocolate sauce over the marshmallow.
Finish & garnish
- 10
Drizzle an additional tablespoon of chocolate sauce over each assembled s'more (or more to taste). Sprinkle a pinch of fine sea salt across the top of each to enhance flavor.
- 11
Sprinkle mini chocolate chips and crushed graham cracker crumbs over the plates for texture and visual appeal. Serve immediately with a small spoon or napkin to catch melting ice cream.
