Waffle Batter

Preheat and prep
Preheat the waffle iron according to manufacturer instructions to medium heat. Lightly grease the waffle iron with nonstick spray or a little melted butter.

Dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, 1 tbsp granulated sugar, and 1 tsp kosher salt until evenly combined.

Wet ingredients
In a separate bowl or large measuring cup, whisk together 1 cup milk, 1 large egg, 2 tbsp melted unsalted butter, and 1 tsp vanilla extract until smooth.

Combine batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few small lumps are fine—do not overmix. Let the batter rest 2–3 minutes while the waffle iron finishes heating.
Bacon

Cook bacon (oven method, even for kids)
Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange 4 strips of thin-cut bacon in a single layer. Bake for 12–15 minutes, checking at 10 minutes for desired crispness. Remove bacon with tongs and transfer to a paper towel-lined plate to drain. Keep warm in a low oven (about 200°F / 95°C) if finishing waffles takes longer.

Alternative stovetop method
Heat a large skillet over medium heat. Add the bacon strips in a single layer and cook 3–4 minutes per side until browned and cooked through. Transfer to paper towels to drain.
Cook Waffles

Once the waffle iron is hot, pour the recommended amount of batter for your iron (usually 1/3 to 1/2 cup) onto the center of the waffle iron. Close and cook until golden brown and crisp, about 3–5 minutes depending on your machine. Avoid opening early to check, which can tear waffles. Repeat with remaining batter to make 2–3 small kid-sized waffles.

Transfer cooked waffles to a plate and keep warm in a low oven (200°F / 95°C) on a baking sheet while you finish the remaining waffles so they stay crisp.
Serve & Garnish

Place 1–2 waffles on a child’s plate, add 1–2 strips of cooked bacon alongside. Add 1 tbsp unsalted butter on top of the waffles to melt and drizzle 2 tbsp maple syrup over the waffles (adjust to taste).

Optionally dust with 1 tsp powdered sugar and add 1/4 cup fresh berries for color and extra fruit. Serve warm.
