Preparing the Sirloin

Season the Sirloin
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the 10 oz. top center cut sirloin. Let it sit at room temperature for 30 minutes.

Preparing Onion Strings

Soak the Onions
Slice the two medium onions into thin rings. Place the rings in a bowl and cover with buttermilk. Let soak for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together all-purpose flour, cornstarch, salt, and black pepper. Heat oil in a deep pan or fryer to 350°F (175°C).

Fry the Onion Strings
Remove the onion rings from the buttermilk, allowing excess to drip off. Dredge them in the flour mixture until fully coated. Fry in batches for about 2-3 minutes or until golden brown. Drain on paper towels.

Prepare Garlic Butter
In a small saucepan over medium heat, melt the unsalted butter. Add the minced garlic and cook for about 1-2 minutes until fragrant but not browned. Stir in chopped parsley and remove from heat.
