Preparing the Tartar Sauce

Make Tartar Sauce
In a mixing bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, finely chopped capers, and a pinch of salt. Mix well until all ingredients are fully combined. Refrigerate until ready to serve.
Preparing the Cod Fillet

Prepare Cod
Pat the cod fillet dry with paper towels. Cut it into a large portion if necessary to fit the bun.

Coat Cod
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer or sparkling water and stir until the batter is smooth.

Heat Oil
In a large, deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Fry Cod
Dip the cod fillet into the batter, allowing excess to drip off. Carefully place it in the hot oil and fry for about 5-6 minutes on each side or until golden brown and cooked through. Use a slotted spoon to remove it from the oil and drain on paper towels.
Assembling the Sandwich

Prepare Vegetables
Slice the tomato and onion. Wash and dry the lettuce leaf.

Assemble Sandwich
On the bottom half of the brioche bun, place the lettuce leaf, followed by the fried cod fillet. Top with two slices of American cheese, tomato slices, and onion slices. Finally, place the top half of the bun on the sandwich.

Serve
Serve the sandwich with the prepared tartar sauce on the side.
