Prepare the Chicken
Preheat your grill or broiler. Season the chicken breasts with olive oil, garlic powder, salt, black pepper, and Italian seasoning on both sides.

Grill the Chicken
Place the seasoned chicken breasts on the grill or under the broiler. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Sauté the Vegetables
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onions and sauté for about 2 minutes until translucent. Then add the green and red bell peppers and portobello mushrooms. Sauté for an additional 5-7 minutes until they are tender. Stir in the chopped tomatoes and cook for another 2 minutes.

Combine and Add Cheese
Once the chicken is cooked, place it in a baking dish. Top the grilled chicken with the sautéed vegetable mixture. Sprinkle mozzarella cheese evenly over the top, followed by the parmesan cheese.

Melt the Cheese
Place the baking dish under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to avoid burning.

Remove from the oven and let it sit for a couple of minutes. Serve hot, garnished with fresh herbs if desired.
