Preparation

    Tenderize the Steak

    Use a meat mallet to gently tenderize the rib eye steaks on both sides. This helps to break down the fibers and makes the steak more tender.

    Season the Steak

    Rub both sides of the tenderized rib eye steaks with salt and black pepper. Let them sit for about 15 minutes to absorb the flavors.

    Prepare the Onions and Mushrooms

    Slice the onions and mushrooms. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and cook until they are translucent, about 5 minutes. Add the mushrooms and cook until soft, about 5 more minutes. Season with salt and pepper to taste.

    Toast the Brioche Buns

    In the same skillet, add the remaining tablespoon of olive oil and place the brioche buns cut side down. Toast until golden brown, about 2-3 minutes.

Grilling the Steak

    Preheat the Grill

    Preheat your grill to high heat. Ensure the grill grates are clean and lightly oiled.

    Grill the Steak

    Place the seasoned rib eye steaks on the grill. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. During the last minute of grilling, place a slice of provolone cheese on each steak to melt.

Assembly

    Assemble the Sandwich

    Once the steaks are grilled and cheese is melted, place each steak on the bottom half of a toasted brioche bun. Top with sautéed onions and mushrooms, and cover with the top half of the bun.

    Serve the rib eye steak sandwiches immediately while hot, with your favorite sides.
