Quesadillas Recipe
Your choice of seasoned chicken or marinated steak, red peppers, caramelized red and green onions meted together in a flour tortilla with Cheddar Jack cheese. Choose any two of the following sauces: Sour cream, Salsa, Santa Fe Ranch.

Slice the Vegetables
Thinly slice the red bell pepper, red onion, and green onion. Set aside.
Cooking

Cook the Chicken/Steak
In a skillet over medium heat, cook the seasoned chicken breast for about 6-7 minutes on each side until fully cooked, or cook the marinated steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest before slicing.

Caramelize the Onions
In the same skillet, add a little oil if needed. Add the sliced red and green onions and cook over medium-low heat, stirring occasionally, until they are soft and caramelized (about 10 minutes). Add the sliced red bell pepper and cook for an additional 2-3 minutes until tender.
Assembling the Quesadillas

Cook the Quesadillas
Fold the tortilla in half and place it in a clean skillet over medium heat. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted. Repeat with remaining tortillas.

Serve with Sauces
Cut the quesadillas into wedges and serve with your choice of sour cream, salsa, or Santa Fe ranch on the side.
