Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the russet potatoes thoroughly under cool water. Pat them dry with a towel.

    Bake the Potatoes

    Pierce each potato several times with a fork. Rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

Assembling the Skins

    Cut and Scoop

    Once the potatoes are cool enough to handle, slice them in half lengthwise. Scoop out some of the flesh from the center, leaving about 1/4 inch of potato on the skin.

    Fill with Cheese and Bacon

    Sprinkle a generous amount of shredded cheddar cheese and bacon bits into each potato skin.

    Return to Oven

    Place the filled potato skins back on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Serve

    Remove the potato skins from the oven and let them cool slightly. Serve with sour cream and salsa on the side. If using taco meat, prepare it by browning the ground beef in a skillet with taco seasoning, and serve alongside the potato skins.
