No meat here! Sliced portabellas, onion, green and red peppers all sautéed with garlic piled on a soft toasted hoagie bun with American and Swiss cheese.

Preparation

    Prepare the Vegetables

    Clean the portabella mushrooms, remove the stems, and slice them into thin strips. Peel and slice the onion into thin strips. Remove the seeds and stems from the green and red bell peppers, then slice them into thin strips. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for 2-3 minutes until they become translucent. Add the sliced green and red bell peppers and continue to sauté for another 3-4 minutes.

    Add Mushrooms and Garlic

    Add the sliced portabella mushrooms and minced garlic to the skillet. Season with salt and black pepper. Sauté the mixture for an additional 5-7 minutes, stirring occasionally, until the mushrooms are cooked and tender.

Assembly

    Prepare the Hoagie Buns

    While the vegetables are cooking, preheat the oven to 350°F (175°C). Slice the hoagie buns in half and place them on a baking sheet. Toast them in the preheated oven for about 5 minutes until they are lightly golden.

    Assemble the Portabella Philly

    Remove the toasted hoagie buns from the oven. Evenly distribute the sautéed vegetable mixture onto each bun. Top each with 1 slice of American cheese and 1 slice of Swiss cheese.

    Melt the Cheese

    Return the assembled sandwiches to the oven for 2-3 minutes, or until the cheese is melted and bubbly.

    Remove the Portabella Philly from the oven and let cool slightly before serving. Enjoy your delicious meat-free sandwich!
