Method
Grilling Chicken

Prepare the Chicken
Preheat your grill to medium-high heat. Pat the chicken breasts dry and rub them with olive oil, garlic powder, salt, and black pepper.

Grill the Chicken
Place the chicken breasts on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Preparing Salad

Combine Mixed Greens
In a large bowl, add the mixed salad greens.

Add Tomato
Chop the medium tomato into bite-sized pieces and add to the bowl with the mixed greens.
Preparing Shaved Parmesan Bacon

Shave the Parmesan
Using a vegetable peeler or a cheese slicer, shave the Parmesan cheese into thin strips.
Making Dressing

Combine Dressing Ingredients
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Assembling the Salad

In the bowl with mixed greens and tomato, add the sliced grilled chicken, crumbled bacon, and shaved Parmesan.
