Preparation of Chicken

    Marinate the Chicken

    In a bowl, whisk together olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken breasts and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes.

    Preheat Grill

    Preheat your grill to medium-high heat, ensuring the grates are clean and lightly oiled.

Preparation of Pineapple Habanero Sauce

    Combine Sauce Ingredients

    In a saucepan, combine the diced pineapple, minced habanero pepper, brown sugar, soy sauce, apple cider vinegar, and lime juice.

    Cook the Sauce

    Bring the mixture to a simmer over medium heat and cook for about 10 minutes until the pineapple is softened and the sauce has thickened slightly.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Add the slurry to the sauce, stirring constantly until it thickens further. Remove from heat and set aside.

Grilling Chicken

    Grill the Chicken

    Place the marinated chicken breasts on the grill. Cook for about 6-8 minutes on one side, then flip and baste with the pineapple habanero sauce. Continue to grill for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C).

    Remove the chicken from the grill and let it rest for a few minutes. Serve hot, drizzled with additional pineapple habanero sauce if desired.
