Method
Pulled Pork
Prepare the Pork
Rub the pork shoulder with yellow mustard, ensuring it's evenly coated. This will help the rub stick and enhance flavor.
Mix the Rub
In a bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.
Season the Pork
Sprinkle the rub mixture all over the pork shoulder, pressing it into the meat to ensure it adheres.
Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Pour apple cider vinegar over the top. Cover and cook on low for 8-10 hours until the meat is tender and easily shredded.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the cooker and mix with BBQ sauce. Let it heat through for about 15 minutes.
Baked Beans
Prepare the Beans
Rinse and soak the dried navy beans in water overnight. Drain and set aside.
Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove bacon and crumble; set aside. Leave the bacon drippings in the pot.
Combine Ingredients
Add the soaked beans, brown sugar, ketchup, mustard, salt, pepper, and water to the pot. Stir to combine.
Cook the Beans
Bring the mixture to a boil, then reduce to a simmer. Cover and let it cook for 1.5 to 2 hours until the beans are tender. Stir occasionally and add more water if needed.
Add Bacon
Once the beans are cooked, stir in the crumbled bacon and let it cook for an additional 10 minutes.
Coleslaw
Prepare the Vegetables
Finely shred the green cabbage and grate the carrots. Place them in a large bowl.
Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
Combine the Coleslaw
Pour the dressing over the cabbage and carrots. Toss to combine until the vegetables are evenly coated.
Chill
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Assemble the Dish
Prepare the Buns
Lightly toast the buns if desired.
Assemble the Pulled Pork Bun
Spoon a generous amount of the pulled pork mixture onto the bottom half of each bun. Top with baked beans and a serving of coleslaw.
Serve
Place the top half of the bun over the fillings and serve immediately.
