Method

Marinated Chicken

Prepare the Marinade

In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to overnight for more flavor).

Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).

Baked or Mashed Potatoes

Prepare the Potatoes

For baked potatoes, preheat the oven to 425°F (220°C). Prick the potatoes with a fork and bake for 45-60 minutes until tender. For mashed potatoes, peel and chop the potatoes into chunks.

Cook the Potatoes

If making mashed potatoes, boil the chopped potatoes in salted water for about 15-20 minutes until fork-tender.

Mash the Potatoes

Drain and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Macaroni and Cheese Bake

Cook the Macaroni

Cook elbow macaroni according to package instructions; drain and set aside.

Make Cheese Sauce

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, then add the shredded cheddar cheese, salt, and black pepper. Cook until cheese is melted and sauce is smooth.

Combine and Bake

In a baking dish, combine the cooked macaroni and cheese sauce. Top with breadcrumbs. Bake at 350°F (175°C) for 25-30 minutes until bubbly and golden.

Salad

Prepare the Salad

Wash and chop the romaine lettuce. In a large bowl, combine the lettuce, cherry tomatoes, and cucumber.

Dress the Salad

Drizzle with Caesar dressing (if using) and toss to combine. Top with grated Parmesan cheese if desired.

Dinner Rolls

Prepare the Rolls

If using store-bought rolls, warm them in the oven at 350°F (175°C) for about 10 minutes. If making from scratch, follow your favorite dinner roll recipe.

Brush with Butter

Remove from the oven and brush the warm rolls with melted butter before serving.
