Prepare Tortillas
Cut each corn tortilla into 6 equal wedges.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry Tortilla Chips
Carefully add the tortilla wedges to the hot oil in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, and cayenne pepper to taste.

Chop Ingredients
Dice the Roma tomatoes, red onion, and jalapeño pepper. Mince the garlic cloves. Finely chop the fresh cilantro.

Mix Salsa
In a mixing bowl, combine diced tomatoes, red onion, jalapeño, minced garlic, and chopped cilantro.

Add Lime and Salt
Squeeze the juice of one lime into the mixture, and add salt. Stir well to combine all ingredients.

Chill and Serve
Let the salsa sit for at least 30 minutes to allow flavors to meld before serving with the tortilla chips.
