Prepare the Fish

Grill the Fish
Preheat a grill or grill pan over medium-high heat. Remove the fish from the marinade and grill for about 3-4 minutes on each side, or until fully cooked and flaky. Remove from heat and let rest for a few minutes before flaking into bite-sized pieces.
Make the Cabbage Slaw

Combine Ingredients
In a large bowl, combine the shredded cabbage, shredded carrot, chopped cilantro, lime juice, and salt. Toss together until well mixed. Set aside to allow flavors to meld.
Prepare the Chipotle Sauce

Mix the Sauce
In a small bowl, whisk together the Greek yogurt (or sour cream), chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Adjust seasoning to taste. Set aside.
Assemble the Tacos

Warm the Tortillas
Heat the corn tortillas on a skillet over medium heat for about 30 seconds on each side, or until warm and pliable.

Fill the Tacos
To each tortilla, add a portion of the grilled fish, followed by a generous amount of cabbage slaw. Drizzle with chipotle sauce.

Enjoy the tacos immediately while warm, garnished with additional lime wedges if desired.
